Ingredients

  • 1 large cucumber, seeded and diced
  • 1 to 2 garlic cloves, minced
  • 1 jalapeno pepper, finely chopped
  • 3 green onions, sliced
  • 2 tablespoons minced fresh cilantro
  • 2 tablespoons lime juice
  • 2 tablespoons olive oil
  • 1 teaspoon grated lime zest
  • 1/2 teaspoon salt, optional
  • 1/4 teaspoon pepper

Directions

  1. In a large bowl, combine all the ingredients. Refrigerate for at least 2 hours before serving.
