Dad’s Favorite Barbecue Meat Loaves

The original recipe came from a Stove Top box and is just delicious! The recipe calls for 2 lbs ground beef to which I add 1/2 lb ground pork. I form whatever size meatloaf I need and make meatballs from the rest. I freeze the meatballs on a flat pan and then package them for the freezer. Later, I will take out just what I need, brown them and simmer in a quick sauce of BBQ sauce and ketchup thinned with water. When they are cooked, I take out the meatballs and reduce the sauce. Yummy!!

Why add a stuffing mix that is loaded with sodium and then put 2% milk in the recipe to make the recipe look healthy? I'd rather have the minute amount of fat from a few tablespoons of milk than the close to a 1000 mg of sodium in the stuffing. It's not even as if the recipe called for lean ground beef. It just seems that these recipes are trendy and just use certain ingredients to appease those trying to eat healthy but not much thought is actually put into the recipe. Want to eat a healthier meatloaf, skip the filler and milk, add more ground beef to the recipe. Forget the stuffing. Just add some salt, pepper and, some fresh veggies like chopped carrots, celery and onion. Seeing how it's a BBQed meatloaf, maybe add some bell pepper. Actually BBQ the loaves over indirect heat low and slow and then build that glaze.
Our family loves this twist on meatloaf. We eat them all the time! So easy to freeze, too, and have a ready meal in only minutes.
These were good... and really easy to make. I might make them again, because of how quick and easy they were. I made them exactly per the recipe, but would probably add additional spices next time.
These were great - fast, easy, tasty! I added chopped onion but otherwise followed the recipe as written.
Good stuff. I used stove top herb stuffing. No need to add extra spices but you can if you want. I usually add some chopped onion, a tablespoon of Worcestershire sauce, and tablespoon of Asian chili paste for spice. This is an easy and versatile dinner.
Tasty meatloaf and easy to make! I wondered about them, since there are no spices or seasoning added, but they were good. With only a 5-minute prep, it's perfect for any weeknight! We'll be making this again.
