Spice-Rubbed Lamb Chops

Ingredients

  • 2 teaspoons lemon juice
  • 2 teaspoons Worcestershire sauce
  • 1-1/2 teaspoons pepper
  • 1-1/4 teaspoons ground cumin
  • 1-1/4 teaspoons curry powder
  • 1 garlic clove, minced
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon crushed red pepper flakes
  • 4 lamb rib chops
  • 1 tablespoon olive oil

Directions

  • Mix first 9 ingredients; spread over chops. Refrigerate, covered, overnight.
  • Preheat oven to 450°. In an ovenproof skillet, heat oil over medium-high heat; brown chops, about 2 minutes per side. Transfer to oven; roast until desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°), 3-4 minutes.
