Quick Chicken Piccata

- 1/4 cup all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 4 boneless skinless chicken breast halves (4 ounces each)
- 1/4 cup butter, cubed
- 1/4 cup white wine or chicken broth
- 1 tablespoon lemon juice
- Minced fresh parsley, optional
- In a shallow bowl, mix flour, salt and pepper. Pound chicken breasts with a meat mallet to 1/2-in. thickness. Dip chicken in flour mixture to coat both sides; shake off excess.
- In a large skillet, heat butter over medium heat. Brown chicken on both sides. Add wine; bring to a boil. Reduce heat; simmer, uncovered, until chicken is no longer pink, 12-15 minutes. Drizzle with lemon juice. If desired, sprinkle with parsley.

This is sooo bland! The picture indicates that the chicken breast is thick, yet the directions say to pound it thin. It shows pasta, yet there is no sauce for it. Rice would've been a better choice.

Question. I hate the taste of wine. when cooking with wine can you taste it in the food. If so what would be a good substitute.

My whole family really enjoyed this recipe! After I took the chicken out of the pan, I added more butter and chicken broth, then added flour to thicken.

Delicious! Husband requests this all the time now, and he is very particular about his food. This recipe is not designed to make sauce for noodles so it’s too bad people rate it low because there wasn’t enough sauce left over for noodles. It is just for chicken...I always make the garlic-butter-white wine sauce from epicurious.com and add it to some angel hair pasta because it uses the exact same ingredients as this chicken recipe so it works out perfectly. I’ve also added some asparagus and mushrooms in with the noodles. Delicious.

This was nothing like any chicken piccata that I’ve ever had... the recipe appealed to me because I do not like capers, but the flavor was so unbelievably bland. There was barely any “sauce” when the chicken was fully cooked. I had to remove it from the pan and dump another 1/4 of wine and tbsp of lemon into the pan and simmer it for a while. Also added maybe 1/8 tsp of garlic and onion powder each. Changes made it paletable, but we will not be making this again.

I made the recipe as directed but there was almost no sauce to serve with the noodles. The taste of the chicken was good.

Tried this today, and so delicious and moist. Had it with pasta but I reckon it will go better with some fresh veggies. I'm having this again!
