Fast Summer Squash Saute

Ingredients

  • 6 small yellow summer squash, cut into 1/2-inch slices
  • 1 large sweet onion, chopped
  • 1 garlic clove, minced
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Directions

  • In a large skillet, saute the squash, onion and garlic in oil and butter for 10-12 minutes or until tender. Sprinkle with salt and pepper.

    I added onions to the squash and it was flavorful

    This is really simple and the flavors come together nicely. I'd cut the salt and pepper in half, though, and go from there. I guess it depends on the size of the squash you're using but ours was a bit salty.
