Easy Grilled Squash
Total TimePrep/Total Time: 20 min.
- 3 tablespoons olive oil
- 2 garlic cloves, minced
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 small butternut squash, peeled and cut lengthwise into 1/2-inch slices
- In a small bowl, combine the oil, garlic, salt and pepper. Brush over squash slices.
- Grill squash, covered, over medium heat or broil 4 in. from the heat for 4-5 minutes on each side or until tender.
Nutrition Facts2 slices: 178 calories, 10g fat (1g saturated fat), 0 cholesterol, 156mg sodium, 23g carbohydrate (5g sugars, 7g fiber), 2g protein. Diabetic Exchanges: 1-1/2 starch, 1-1/2 fat.

Disturbing. Looks like a sliced, grilled phallus. But very tasty.

This recipe was super easy to make (except cutting up the squash). I had a very small squash and should have cut the garlic down. Other than that, great idea! It was nice and sweet as well. Thanks!

Very simple to make and delicious! Love the way the savoriness of the garlic plays off the sweetness of the butternut squash.

Had recently gotten the June/July issue and found this recipe. Had family over for Memorial Day and made it. Everyone LOVED it! Great flavor and texture. Quick and easy too. We will definitely make again.
