Spicy Grilled Eggplant
Total TimePrep/Total Time: 20 min.
- 2 small eggplants, cut into 1/2-inch slices
- 1/4 cup olive oil
- 2 tablespoons lime juice
- 3 teaspoons Cajun seasoning
- Brush eggplant slices with oil. Drizzle with lime juice; sprinkle with Cajun seasoning. Let stand 5 minutes.
- Grill eggplant, covered, over medium heat or broil 4 in. from heat until tender, 4-5 minutes per side.

This was very tasty. I sliced it and sprinkled it with salt then used paper towels to blot up the moisture. Very easy, looked nice and tasted nice and fresh. VFE

This is a great way to make eggplant. I salted the slices and let them sit for 20 minutes, then patted with a paper towel. They cook up quickly depending on how hot your grill is, so watch that they don't burn.

I have never tried eggplant and this recipe was so good! Even my boyfriend who won't eat peas liked it! I did it on the george forman, but next time I might broil them so they are a little more crisp.
