Spicy Grilled Eggplant

This side goes well with any meat you might also be grilling. Thanks to the Cajun seasoning, the zesty eggplant gets more attention than an ordinary veggie. —Greg Fontenot, The Woodlands, Texas

This was very tasty. I sliced it and sprinkled it with salt then used paper towels to blot up the moisture. Very easy, looked nice and tasted nice and fresh. VFE

This is a great way to make eggplant. I salted the slices and let them sit for 20 minutes, then patted with a paper towel. They cook up quickly depending on how hot your grill is, so watch that they don't burn.

I have never tried eggplant and this recipe was so good! Even my boyfriend who won't eat peas liked it! I did it on the george forman, but next time I might broil them so they are a little more crisp.
