- 1 cup sliced zucchini
- 1 cup sliced yellow summer squash
- 2 tablespoons finely chopped onion
- 1/2 teaspoon olive oil
- 1/4 teaspoon dried basil
- 1/4 teaspoon dried oregano
- 1/8 teaspoon salt
- Dash garlic powder
- Dash pepper
- In a large skillet, saute the zucchini, squash and onion in oil for 4-6 minutes or until crisp-tender. Add the remaining ingredients; cook 1 minute longer.

Great flavor! I doubled the recipe and used canola oil instead of olive oil.

the spice blend was tasty but the squash was very liquid in the center and diluted flavor. my change was canola for olive oil. i will make again because it's easy and i can add parmesan cheese to boost flavor.

My husband and I both enjoyed the seasonings on this easy recipe. You could easily substitute other fresh vegetables.
