Easy Banana Nut Bread
Total TimePrep: 10 min. Bake: 40 min. + cooling
Makes2 loaves (12 slices each)
- 1 package yellow cake mix (regular size)
- 1 egg
- 1/2 cup 2% milk
- 1 cup mashed ripe bananas (about 2 medium)
- 1/2 cup chopped pecans
- In a large bowl, combine the cake mix, egg and milk. Add bananas; beat on medium speed for 2 minutes. Stir in pecans.
- Pour into two greased 8x4-in. loaf pans. Bake at 350° for 40-45 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely.

Quick & easy. I added two additional bananas and one additional egg, as did previous reviewers for more banana taste. The texture is more like cake than bread, but it's a good recipe.

This was fast, easy and very tasty. My family enjoyed it so much. I followed the recipe exactly and both loaves rose as they should with a nice banana flavor. It's not a "poor replica" as a reviewer in 2013 remarked...

Very nice flavor. My loaves did not rise more than about 2 1/2 inches, so next time I may use smaller pans or put it all into one pan. I did use blueberries in place of nuts, so that may have affected the result. But, for a fast and tasty bread- it is worth making

I use a carrot cake or spice cake . It adds more flavor & I add cinnamon & nutmeg, also atopping of butter,brown sugar & cinnamon & nutmeg to top.

I agree about adding more banana for a stronger flavor. Has the right amount of sweetness . I used my cupcake tins and shortened the bake time.
