On rainy days when we need comfort food in a hurry, I toast sandwiches of cinnamon-raisin bread with white cheddar, apple and red onion. They also are totally tasty made with vegan cheese and olive oil instead of butter! —Kathy Patalsky, New York, New York

  • 4 slices whole wheat cinnamon-raisin bread
  • 4 slices sharp white cheddar cheese (3 ounces)
  • 1 small apple, thinly sliced
  • 1 thin slice red onion, separated into rings
  • 1/4 teaspoon crushed red pepper flakes, optional
  • 1 tablespoon butter, softened


  1. Layer each of 2 bread slices with 1 slice cheese. Top with apple and onion. If desired, sprinkle with pepper flakes. Top with the remaining cheese and bread. Spread outsides of sandwiches with butter.
  2. In a large skillet, toast sandwiches over medium-low heat 3-5 minutes on each side or until golden brown and cheese is melted.

    Pretty good. The onion was overpowering and we could not taste the apple, but I think that was due to the thickness of my slices. We used white raisin cinnamon raisin bread with a small amount of Miracle Whip on the inside. This was tasty, but I think that Cranberry bread would be outstanding. We also tried these with and without some thin sliced turkey sandwich meat, and preferred them WITH the turkey. I would also consider trying a little bit of bacon sometime, maybe even in lieu of the onion. Overall, they were different & interesting; a nice change. They seemed like something you'd find on a Panera Bread menu. Thanks for the recipe!

    I would never have thought to combine these ingredients but the result is delicious! I've eaten three of these sandwiches in the last three days and will definitely make again.

    While there were some concerned looks from my husband and teenage son while I was assembling these sandwiches, the end results are amazing! Ratings of "Best Sandwich Ever" and "Oh my gosh, can I have another?" were heard from the dinner table. Warning, you WILL go through an entire loaf of cinnamon bread! Don't plan on any leftovers. The flavors in this sandwich are complex and blend beautifully. This is a new family favorite!
