Raisin Bran Muffins Recipe

Ingredients

  • 1 package (15 ounces) raisin bran cereal
  • 5 cups all-purpose flour
  • 3 cups sugar
  • 5 teaspoons baking soda
  • 2 teaspoons salt
  • 4 eggs, beaten
  • 4 cups buttermilk
  • 1 cup vegetable oil

Directions

  • In a large bowl, combine the raisin bran, flour, sugar, baking soda and salt. Combine the eggs, buttermilk and oil. Stir into dry ingredients just until moistened.
  • Fill greased or paper-lined muffin cups two-thirds full. Bake at 400° for 12-16 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks. Yield: 3-1/2 dozen.

Nutritional Facts 1 serving (1 each) equals 204 calories, 6 g fat (1 g saturated fat), 21 mg cholesterol, 355 mg sodium, 35 g carbohydrate, 2 g fiber, 4 g protein.

Big Batch Baked Goods

We enjoy homemade baked goods for breakfast, but I don’t have time to bake each morning before school. So I devote 1 day a month to making large batches of cinnamon rolls, doughnuts, cream cheese rolls and muffins. I place them in heavy-duty resealable plastic bags labeled with the date. (They freeze for about 2 months.) On busy mornings, it’s a snap to pop a few in the microwave to warm. The kids love the fresh-baked flavor. —Lori T., New London, Texas

This recipe was okay on it's own, but I felt like it needed more flavor. I added a few shakes of cinnamon, a pinch of cloves, a 1/2 tsp. vanilla and a splash of orange juice to the batter.

I halved the recipe and still got about 36 normal-size muffins. There is much room for flavor additions.
