Savory Apple-Chicken Sausage

These easy, healthy sausages taste great, and they make an elegant brunch dish. The recipe is also very versatile: It can be doubled or tripled for a crowd, and the sausages freeze well either cooked or raw. —Angela Buchanan, Longmont, Colorado

Ingredients

  • 1 large tart apple, peeled and diced
  • 2 teaspoons poultry seasoning
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 pound ground chicken

Directions

  • In a large bowl, combine the first 4 ingredients. Crumble chicken over the mixture and mix well. Shape into eight 3-in. patties.
  • In a large, greased cast-iron or other heavy skillet, cook patties over medium heat until no longer pink, 5-6 minutes on each side. Drain if necessary.

    Oh my gosh! I just made these exactly as written. Outstanding! And by using chicken or turkey they are a lot healthier, and oh so easy! Thank you, thank you thank you! Going to make on camping trips too.

    These are really good. I used turkey burger instead of chicken and everyone liked them. I did add another 1/2 teaspoon of pepper, but it still wasn't as spicy as I would have liked. But still, very, very good.

    I also used ground turkey instead of chicken. They tasted wonderful. The only problem I had was to keep them from falling apart. Maybe I should of used a smaller apple.

    This is a very mild tasting sausage. We used ground turkey instead of the chicken. This recipe goes well with the Pumpkin Pancakes with Cinnamon Brown Butter recipe. Due to the leaness of the meat be careful not to cook at too high of a temp or they will not brown but burn.

    I made this for my family for Christmas breakfast last year. They all raved and were really impressed with my cooking skills. I didn't tell them how easy this was to make! I used ground turkey instead of chicken.
