Roasted Honey Sweet Potatoes

- 6 medium sweet potatoes, peeled and cut into 1-inch cubes
- 1/3 cup honey
- 1/4 cup olive oil
- 1-1/2 teaspoons salt
- 1-1/2 teaspoons ground cinnamon
- 1/2 teaspoon pepper
- Preheat oven to 375°. Place potatoes in a large bowl. Whisk together honey, oil, salt, cinnamon and pepper; add to potatoes and toss to coat. Transfer to a greased 15x10x1-in. baking pan. Roast until tender, 45-50 minutes, stirring once.

We loved this! Have made it with sweet potatoes and with butternut squash and both are excellent. So easy and I covered the pan with non-stick foil so clean up was a breeze. Definitely a keeper.

A wonderful sweet potato recipe! Roasting the sweet potatoes bring out their natural sweetness and the honey glaze really takes it over the top. We loved this delicious dish. It's a perfect accompaniment to any entree and would be especially good for any holiday buffet. I think I'll make this for Easter to go with our ham. A keeper, for sure!
