Ingredients

  • 2 lbs. fingerling potatoes, halved lengthwise
  • 1/4 cup finely chopped onion
  • 3 tablespoons olive oil
  • 2 tablespoons honey
  • 2 garlic cloves, minced
  • 2 teaspoons ground mustard
  • 1 teaspoon dried parsley flakes
  • 2 teaspoons sea salt
  • 1/2 teaspoon coarsely ground pepper
  • Additional honey, optional

Directions

  1. Preheat oven to 375°. Place potatoes in a greased 15x10x1-in. baking pan. In a small bowl, combine next 8 ingredients. Pour over potatoes; toss to coat. Bake, uncovered, until golden and tender, 35-40 minutes, stirring potatoes once halfway through cooking. If desired, drizzle potatoes with additional honey.
