Garlic-Roasted Sweet Potatoes

- 2 cups cubed peeled sweet potatoes
- 1 garlic clove, minced
- 1 tablespoon olive oil
- 1/8 teaspoon salt
- Pinch pepper
- In a small baking dish, combine the sweet potatoes and garlic. Drizzle with oil; sprinkle with salt and pepper. Bake, uncovered, at 425° for 25-30 minutes or until tender, stirring every 10 minutes.

Loved these sweet potatoes. Super healthy & super easy. I added 2 garlic cloves and they were fantastic!

OMG soo easy and flavorful. I never liked sweet potatoes but made this recipe and will make it again and again!!

SO SIMPLE BUT YET SO GOOD. A SWEET POTATO IS A GREAT SIDE DISH BY ITSELF - WITHOUT THE ADDITION OF SWEETENERS. MY HUSBAND LOVED THIS DISH.
