- 3/4 cup orange marmalade
- 6 tablespoons orange juice
- 1/3 cup butter, cubed
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 3 cans (14-1/2 ounces each) sliced beets, drained
- In a large skillet, combine the first 5 ingredients. Bring to a boil; cook and stir until thickened, 3-4 minutes. Add the beets; cook and stir until most of the liquid is absorbed, 6-8 minutes longer.

Super fast to make! I had fresh cooked beets from the garden that I just sliced. A nice subltle twist on the flavor with just a hint of orange.
