Onion Cucumber Salad with Vinegar Dressing
Total TimePrep: 15 min. + chilling
- 7 medium cucumbers, sliced
- 1 small onion, sliced
- 1 small green pepper, cut into thin rings
- 2 tablespoons salt
- 1 tablespoon celery seed
- 2 cups sugar
- 1 cup white vinegar
- In a large serving bowl, combine the cucumbers, onion and green pepper. Sprinkle with salt and celery seed. Combine the sugar and vinegar; pour over cucumber mixture. Cover and refrigerate for at least 8 hours. Serve with a slotted spoon.

Very tasty! A great summer side dish. They longer it sat in the refrigerator the better it got , so I would reccomend making it a day ahead .

This is simple to make. The only downside is how long it has to chill before serving; however, it does allow the ingredients to absorb and makes to taste better. I only used about half the amount of sugar stated.

I cut this in half for home. I only used 3/4 cup of sugar and it was great. And, if you are making this just for the two or three of you...I put the leftovers in the frig and they were even better after a couple of days. Make sure you stir it up really well before serving again.
