Onion Cucumber Salad with Vinegar Dressing
This crisp refreshing salad is flavored with green pepper and a sprinkling of celery seed, then drizzled with a slightly sweet vinegar dressing. "I use this recipe over and over," says Mildred Mann of Jeffersonville, Kentucky. "It's especially nice for picnics or other warm-weather get-togethers."

Very tasty! A great summer side dish. They longer it sat in the refrigerator the better it got , so I would reccomend making it a day ahead .

This is simple to make. The only downside is how long it has to chill before serving; however, it does allow the ingredients to absorb and makes to taste better. I only used about half the amount of sugar stated.
I cut this in half for home. I only used 3/4 cup of sugar and it was great. And, if you are making this just for the two or three of you...I put the leftovers in the frig and they were even better after a couple of days. Make sure you stir it up really well before serving again.
Quick & easy. I also add sliced tomatoes for variation

We love this salad! I use red peppers for a splash of color, and it adds a bit of sweetness!
