Cucumbers with Dressing

This is my go to recipe whenever there is a cucumber in my fridge! It’s easy as 1-2-3 to prepare and is delicious. The combo of mayonnaise, rice vinegar and sugar hits every tastebud. If you enjoy a sweeter dressing, I would say give it a try. Warning: hard not to eat it all in one sitting.
I made this last summer. I ate myself, pretty much! I'd never had this before. I will make it again.
Having an abundance of cucumbers in our garden, I made a triple batch. All our family and friends love them. Made batch #2 tonight, I‘M going to add the dill this time. They are also wonderful with a bit of black pepper.
I love this recipe. Reminds me of potlucks when I was a kid. I did add some sliced sweet onion and some dill seasoning.
I learned this recipe when I was 11 yrs old that was many moons ago. Now I taught my daughter it and my granddaughters love it.
My Mom has made this for years and I, of course, have made it for my family for the past 40 years. I also like adding thinly sliced onions. Sometimes I will also add diced fresh tomatoes. I sprinkle celery seed on top before serving. Daughter has for this just this week.
My grandmother always made her cucumber salad with sour cream. When I saw this recipe using mayonnaise instead I just had to try it. I'm so glad I did! The dressing is similar to what I use to make coleslaw and pairs very nicely with the cool and fresh cucumbers. The only thing I did different was to add chopped onions. I'll surely be making this salad again for future picnics! Five stars for sure!
I make a similar version but use sour cream in place of mayonnaise - the way my mom taught me decades ago. Love this cool and refreshing way to enjoy cucumbers.
The dressing lasts a little over a week if keep chilled. You can keep adding more sliced cucumbers over the next few days as they get eaten up....the taste just gets better as the cucumbers draw out their juice into the dressing. THIS SHOULD BE MADE AT LEAST 1 TO 2 HOURS AHEAD FOR BEST RESULTSI add a small to medium red onion, sliced, then cut slices in half and separate. I also add about 2 stalks of celery chopped & about 1 scant teaspoon of celery SEED. It improves both the flavor and the look of the salad.Dill is also good in this. However I do not use that most of the time.If I make this for a crowd, there is always a few people who want the recipe. So I keep a few copies of the recipe printed up.
This recipe brings back great memories. I make the sauce similarly but add slices tomatoes and onions. I'd make a little more sauce to compensate however letting it sit overnight makes for the most delicious vegetable salad. Ideally I use fresh garden tomatoes from home or the farmers market but the sauce does wonders either way. The tomatoes and onions add so much flavor to the sauce you just can't get enough of it.
