Cucumber Salad with Sour Cream
Total TimePrep: 10 min. + chilling
- 1/2 cup sour cream
- 2 teaspoons sugar
- 1 teaspoon white vinegar
- 1 teaspoon salt
- 1/2 teaspoon dill weed
- 4 medium cucumbers, sliced
- In a large bowl, combine sour cream, sugar, vinegar, salt and dill. Add cucumbers; toss to coat. Chill for at least 30 minutes.
Nutrition Facts1/2 cup: 46 calories, 2g fat (1g saturated fat), 8mg cholesterol, 242mg sodium, 5g carbohydrate (4g sugars, 1g fiber), 2g protein.

Great recipe! I have made this many times this summer using all of my garden fresh cucumbers. I do prefer to use apple cider vinegar for a little extra flavor.

I made this today and it was very good and very refreshing.I seasoned and mixed the sliced cucumbers first with the sugar, salt and Dill weed (I used Dried Dill weed ) as this allowed the seasonings to totally coat the cucumbers . I added the sour cream (I used Reduced Fat Daisy Brand Sour Cream) and vinegar last then mixed it again gently .I like to slice the cucumbers very thin as thay pick up more flavor .If desired thin slices of Vidalia Onion are also a nice addition.Alliea -Field Editor

This is a great cucumber salad. I add a thinly sliced vidalia onion and often double it when I have an abundance of home grown cucumbers...it lasts for day in the fridge..try it you might enjoy it as much as we do.
