Ingredients

  • 1/4 cup mayonnaise
  • 4 teaspoons olive oil
  • 1-1/2 teaspoons grated lemon zest
  • 1 garlic clove, minced
  • 1/2 teaspoon pepper
  • 1/4 teaspoon seasoned salt
  • 1 pound fresh asparagus, trimmed
  • 2 tablespoons shredded Parmesan cheese
  • Lemon wedges, optional

Directions

  1. Preheat broiler. In large bowl, combine the first 6 ingredients. Add asparagus; toss to coat. Place in a single layer on a wire rack over a foil-lined 15x10x1-in. baking pan.
  2. Broil 5-6 inches from heat until tender and lightly browned, 5-7 minutes. Transfer to a serving platter; sprinkle with Parmesan cheese. If desired, serve with lemon wedges.

  • In order to keep asparagus fresh longer, place the cut stems in a container of cold water—similar to flowers in a vase. Place container in the refrigerator, changing the water at least once every 2 days.
  • When buying asparagus, look for firm, straight, uniform-size spears. The tips should be closed and dry.
