Ingredients: 1 tablespoon plus 1 cup olive oil, divided; 1 large onion, finely chopped; 3 garlic cloves, minced; 2 packages (10 ounces each) frozen chopped spinach, thawed and squeezed dry; 1/2 package (16 ounces) frozen phyllo dough, thawed; 2 large eggs, lightly beaten; 2 cups (8 ounces each) crumbled feta cheese; 3 tablespoons chopped fresh parsley; 1 tablespoon snipped fresh dill; 2 teaspoons chopped fresh mint, optional; 1/2 teaspoon salt; 1/4 teaspoon pepper
