Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 6 large eggs, room temperature
  • 1 cup 2% milk
  • 1/2 pound fully cooked ham, cubed
  • 1/2 pound cheddar cheese, diced or shredded
  • 1/2 pound sliced bacon, cooked and crumbled
  • 1 small onion, finely chopped

Directions

  1. In a large bowl, combine the flour, sugar, baking powder, salt and pepper. Beat eggs and milk; stir into dry ingredients until well combined. Stir in the ham, cheese, bacon and onion. Fill well-greased muffin cups three-fourths full.
  2. Bake at 350° until a toothpick inserted in the center comes out clean, about 45 minutes. Cool for 10 minutes before removing to a wire rack.
