Ginger Salmon with Cucumber Lime Sauce

This looks like a fancy restaurant meal! I have to admit that I probably would never have tried cucumber and lime together if not for this recipe, but it works. I used rice wine - I haven't tried it with white wine vinegar. Make sure you use medium cukes, not large ones. Works well in the oven as well as on the grill. Will definitely make again.
This dish is amazing. I will definitely make it again and again. I liked the extra sauce on chicken the next day! Extra bonus!
The Salmon and the sauce are excellent with the sauce having a really fresh taste. I made 1/2 batch and had tons of sauce leftover. When I make it again (and I definitely will), I will cute the sauce down. Thanks for this wonderful, tasty recipe.

I made this last night and I thought I'd died and gone to heaven. The tastes were fantastic. don't skimp on the ginger-- use fresh. I added grated lime peel to the rub that goes on the rub. The sauce makes a huge batch. Reduce the cukes by a bit. Love love loved this. Will definitely be making again soon!
