Celery Mushroom Rice Medley

- 1 cup chopped onion
- 1 cup chopped celery
- 1 cup sliced fresh mushrooms
- 1/2 cup chopped green pepper
- 1/4 cup butter, cubed
- 2-1/2 cups cooked rice
- 3/4 teaspoon salt
- 1/2 teaspoon rubbed sage
- Pinch pepper
- In a large skillet, saute onion, celery, mushrooms and green pepper in butter until tender, about 8 minutes. Stir in rice, salt, sage and pepper; reduce heat to low. Cook and stir 3-4 minutes longer or until heated through.
Nutrition Facts3/4 cup: 172 calories, 8g fat (5g saturated fat), 20mg cholesterol, 392mg sodium, 23g carbohydrate (2g sugars, 1g fiber), 3g protein.

Absolutely delicious!! I have been looking for a good and easy rice side dish and this was wonderful! Followed recipe minus the mushrooms because I didn't have any. I will definitely make this one over and over! Thanks for sharing!
