The idea of a baked potato pizza may sound odd, but that doesn’t mean there’s anything wrong with it. Anyone who likes cheesy, loaded potatoes will absolutely love this recipe. It takes all the elements of twice-baked potatoes and puts them on a crust. Admittedly, it’s the furthest thing from a classic Neapolitan pizza, but not everyone is a pizza purist. Many of our favorite homemade pizza recipes reflect that. So we say embrace what you like—especially when it turns a fork-and-knife dish like baked potatoes into a handheld treat!

Ingredients for Baked Potato Pizza

  • Pizza crust mix: Starting with a pizza crust mix makes this recipe accessible to any cook, regardless of your dough-making skills.
  • Baked potatoes: Baked potatoes are an unusual pizza topping, but this is an unusual pizza. You can bake the potatoes using your favorite method (including our go-to jacket potato recipe, aka the secret to better potatoes).
  • Butter: The melted butter in this recipe helps the seasonings adhere to the potatoes. It also helps the potatoes brown in the oven.
  • Seasonings: Garlic powder adds a pungent kick, while Italian seasoning brings herbal flavors.
  • Sour cream: Tomato sauce would be out of place on a potato pizza, so sour cream plays the role of the pizza sauce.
  • Bacon and green onions: Bacon and green onions (or chives) are a common topping for baked potatoes in restaurants, so they make sense as toppings for this pizza.
  • Cheeses: Shredded mozzarella cheese reinforces the pizza connection, giving this recipe the classic long, gooey mozzarella “pull.” We also use shredded cheddar. It isn’t common on pizzas but is a frequent topping on baked potatoes, so it works here.

Directions

Step 1: Prepare the crust

Prepare the pizza crust according to the directions on the package. Press the dough into a lightly greased 14-inch pizza pan, building the edges up slightly. Bake the crust at 400°F for five to six minutes, or until the crust is firm and begins to brown.

Step 2: Prepare the potatoes

Cut the baked potatoes into 1/2-inch cubes. In a bowl, combine the butter, garlic powder and Italian seasoning. Add the potatoes and toss to coat.

Step 3: Assemble the pizza

Spread sour cream over the crust. Top it with the seasoned potatoes, bacon, onions and shredded cheeses.

Step 4: Bake the loaded baked potato pizza

Bake the pizza for 15 to 20 minutes or until the cheese is lightly browned. Let the pizza stand for five minutes before cutting and serving.

  • Make pierogi pizza: To make a pizza that captures all the elements of a homemade pierogi, start with mashed potatoes instead of baked potatoes. Incorporate the sour cream into the mash (or swap in cream cheese to make creamy mashed potatoes). Spread the potato mixture onto the crust and add caramelized onions and mozzarella cheese. If desired, top the pie with more caramelized onions, crispy fried onions, crisp bacon or sliced or diced sausage.
  • “Top load” the pizza: The whole idea of a baked potato pizza is to replicate the experience of a loaded baked potato. How to Store Baked Potato Pizza

To prep ahead of time, you can make and parbake the crust. You can also prepare the potatoes and shred the cheese, but it’s best to store everything in separate airtight containers in the fridge. Then, you can assemble the pie quickly just before it goes into the oven.

Can I use a different crust to make baked potato pizza?

The packaged crust mix is an easy option but by no means mandatory. If you’d rather start with a store-bought crust, that’s fine! So is store-bought pizza dough, either fresh or frozen. The best option is to make homemade thin-crust pizza dough, which is easier to make than you might think.

What kind of potatoes should you use to for pizza?

The best type of potatoes for baked potatoes are russets, which bake up to become light and fluffy. Using russet potatoes for this recipe will add a similar texture to your pizza. That said, they also tend to fall apart as they’re chopped for exactly the same reason. You might prefer a waxy red potato or an all-purpose potato like Yukon Gold. Those will dice neatly and hold their shape as you toss them with the butter mixture while still providing a great potato flavor.
