One evening, Mom and I helped each other put together this taco sandwich using things we had on hand. It's delicious and was an instant hit with our family. —Melody Stoltzfus, Parkesburg, Pennsylvania

Ingredients

  • 1 loaf (1 pound) unsliced Italian bread
  • 1 pound ground beef
  • 2 tablespoons taco seasoning
  • 4 ounces cream cheese, softened
  • 1/2 cup salsa
  • 1 cup shredded lettuce
  • 1 large tomato, sliced
  • 6 slices American cheese

Directions

  1. Cut bread in half lengthwise; hollow out top and bottom of loaf, leaving a 1/2-in. shell (discard removed bread or save for another use).
  2. In a large skillet, cook beef over medium heat until no longer pink, breaking into crumbles, 5-7 minutes; drain. Stir in taco seasoning.
  3. In a small bowl, beat cream cheese and salsa until blended. Spread inside top and bottom of bread shell. Add lettuce, tomato, beef mixture and cheese to bottom shell. Replace bread top. Cut into slices.

What else can you add to taco sandwiches?

If you're feeling ambitious, make your own homemade taco seasoning for the taco meat. On the flip side, feel free to use leftover taco meat from Taco Tuesday. Either way, you could spread some guacamole over top the cream cheese mixture or swap out the American cheese for something with a little kick, such as pepper jack. Sliced pickled jalapenos sound like a great idea, too. And some salsa verde couldn't hurt, either!

Can you serve these taco sandwiches hot?

Although the ground beef in the sandwiches will already be warm, you could also toast the sandwiches so that the cheese is melty and the bread is warm. Turn on the broiler, then put the sandwich halves (save the lettuce and tomato for later) in the oven for a few minutes. Finish assembling, and you'll have one tasty, toasty taco sandwich!
