This rich, creamy pasta dish is a snap to throw together for a weeknight meal but special enough for company. You can substitute another cheese for the Gorgonzola if you like.George Schroeder, Port Murray, New Jersey

Used Feta Cheese, ground sage and wheat penne pasta. Great!

Outstanding meal. Also made it without the chicken & served as a side along mesquite-smoked pork tenderloin--the strong cheese stood up great alongside the smoked loin

This dish needed some additional vegetable, Peas, perhaps. It was tasty, however. Could be good with roasted pork as well

Great quick and easy dish! I was cooking for my two year old son so I only added half of the gorgonzola - he devoured it! I also added sliced mushrooms, yum!

Absolutely heavenly!! I added asparagus. Even my 10 month old grandson loved this recipe.

My family loved this!! I left out the sage leaves, however, as we do not care for it. I also crushed Ritz crackers, mixed them with melted butter, and baked in oven for several minutes. Then I sprinkled the crumbs over the pasta before serving. DELICIOUS!!!

I love gorgonzola, but not all my family members do. I've substituted parmesan reggiano and the results are milder, more kid-friendly.

George, What other cheese(s) can you recommend that would be just as good as the Gorgonzola in this recipe? I've never heard of that cheese and from reviews it's quite strong/sharp. Any subs that would taste as good, or almost as good, would be appreciated. =)

I just tried this recipe and I LOVED it., But hubby isn't as fond of gorgonzola cheese as I am and the thought it too strong. Anyone have an substitute suggestions?
