Great veggie side dish. I like to cook it until the cheese and tomatoes are slightly charred, gives it a sweet, smokey flavor

This is a great dish! I added some basil from our garden and tossed it with some pasta. Even my meat-eater husband loved it!

I sliced the zucchini into thinner slices-more like you would for fried potatoes. It turned out EXCELLENT. Made according to directions, it makes zucchini taste like a really good homemade spaghetti sauce. My four year old ate this, and asked for MORE!

I add fresh tomato, mushroom & onions. I then, steam all together, when done, I sprinkle with parm cheese.

It is rare to find a recipe for vegetables that my kids will eat. This one was not only easy to make but so flavorful that my kids and my mother ate it like it was dessert!
