Even people who don’t like peas love this crunchy recipe, including my own children. I love the fact that it‘s so easy and makes a refreshing alternative to more traditional salads. A friend gave me the recipe years ago and I’ve been making it ever since. --Laurinda Nelson, Phoenix, Arizona

TIME: Prep/Total Time: 15 min.

Ingredients:

  • 1 package (10 ounces) frozen peas, thawed
  • 1 cup dry roasted peanuts
  • 1 cup chopped celery
  • 6 bacon strips, cooked and crumbled
  • 1/4 cup chopped red onion
  • 1/2 cup mayonnaise
  • 1/4 cup prepared zesty Italian salad dressing

Directions:

In a large bowl, combine the peas, peanuts, celery, bacon and onion. In a small bowl, combine the mayonnaise and Italian dressing. Pour over salad and toss to coat. Chill until serving. Yield: 5 servings.

    Excellent recipe...coming from someone who is no fan of peas is saying something!!! I woudn't change a thing other than add cheese! I have brought this salad to two gatherings now and have received great reviews.

    Sounds delic but, in my opinion, pea salad is NOT pea salad without cubed Velveeta cheese. I will try this with the added cheese.
