- 2 medium ripe avocados, peeled and pitted
- 3 tablespoons mayonnaise
- 1 plum tomato, chopped
- 1 jalapeno pepper, seeded and chopped
- 2 tablespoons minced fresh cilantro
- 1 tablespoon lemon juice
- 1/4 teaspoon salt
- Corn chips
- In a small bowl, mash the avocados and mayonnaise until smooth. Stir in the tomato, jalapeno, cilantro, lemon juice and salt. Serve with corn chips. Yield: 1-1/2 cups.

"We found this guacamole to be rather bland -- wished I'd bought more jalepeno peppers. I don't like things hot and spicy normally, but this needed more kick. The mayonnaise was the prominent flavor."
