Sometimes all you need is a simple sheet pan dinner to get you by for a weeknight and this andouille sausage and peppers recipe is just that. It’s simple with tasty ingredients and flavored with a Creole seasoning. You don’t have to worry about using too many ingredients. It’s a tasty crowd pleaser that everyone at home will love and it only takes mere minutes for you to throw together before it goes in the oven. Plus, it even saves you time on dishes. Ingredients for Andouille Sausage and Peppers
- Potatoes: This recipe calls for 1 pound, about 2 medium potatoes. Our favorite types of potatoes to use include Yukon gold and red potatoes.
- Andouille chicken sausage: Choose any flavor you desire. This recipe will work for them all!

Directions
Step 1: Toss the ingredients together
Preheat the oven to 400°F. Meanwhile, in a large bowl combine the potatoes, sausage, onion, red pepper, green pepper and pepper rings. In a smaller bowl, mix together the oil, Creole seasoning and the pepper. Drizzle it over the potato mixture and toss everything to coat.
Step 2: Roast in the oven
Coat a 15x10x1-inch baking pan with cooking spray and then transfer the mixture. Roast until the vegetables become tender, stirring occasionally; about 30 to 35 minutes.

- 1 package (12 ounces) fully cooked andouille chicken sausage links or flavor of your choice, cut into 1-inch pieces
- 1 medium red onion, cut into wedges
- 1 medium sweet red pepper, cut into 1-inch pieces
- 1 medium green pepper, cut into 1-inch pieces
- 1/2 cup pickled pepper rings
- 1 tablespoon olive oil
- 1/2 to 1 teaspoon Creole seasoning
- 1/4 teaspoon pepper
