1 can (16 ounces) kidney beans, rinsed and drained
1 medium green pepper, chopped
1 bay leaf
2 tablespoons chili powder
1-1/2 teaspoons salt
1 teaspoon dried oregano
1 teaspoon brown sugar
1/2 teaspoon each celery seed, paprika and ground mustard and cumin
1/4 teaspoon cayenne pepper
1/4 teaspoon dried basil
Directions
Cut meat into 1/2-in. cubes. In a large kettle or Dutch oven, brown meat, onion and garlic in oil. Add remaining ingredients; bring to a boil. Reduce heat; simmer, uncovered, for 3 hours. Discard bay leaf before serving.

We love this recipe because it doesn't contain ground beef! I usually put in almost 2 lbs of steak, and add some kind of beans at the end. It's a great recipe to make while watching football. Just get up to stir it every now and then, and add a loaf of freshly baked bread. And yes, as lje-hm notes, the recipe repeats the tomatoes and celery, (an error).

I want to try this recipe because I think using round steak instead of hamburger would be a yummy change of pace but am a little confused. In list of ingredients it shows a 28 ounce can crushed tomatoes, 2 cups celery, a 16 ounce can crushed tomatoes, 2 cups celery - is this a misprint or does this chili use 4 cups celery and 2 different size cans of crushed tomatoes?

This is great. I use lean ground beef instead of the round steak. I let people top their chili with onions, sour cream & shredded cheese.
