This pork meatballs recipe is one of my favorites. My mom used to make the moist, flavorful meatballs often, and they were part of our traditional dinner on Shrove Tuesday, served with homemade gnocchi. —Joan Newberry, Indiana, Pennsylvania

Ingredients

  • 1 large egg, lightly beaten
  • 1 slice bread, crumbled
  • 1 garlic clove, minced
  • 1/4 cup grated Romano or Parmesan cheese
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried parsley flakes
  • 1/4 teaspoon pepper
  • 3/4 pound ground pork
  • 1 can (14-1/2 ounces) beef broth

Directions

  1. In a bowl, combine the first 7 ingredients. Crumble meat over mixture and mix lightly but thoroughly. Shape into ten 2-in. balls.
  2. In a saucepan, bring broth to a boil. Place meatballs in the broth. Reduce heat; cover and simmer for 15 minutes. Turn meatballs; cook until meatballs are cooked through, about 15 minutes, turning occasionally. Remove with a slotted spoon. If desired, sprinkle with additional cheese and parsley.

Can you freeze Pork Meatballs?

Freeze cooled meatball mixture in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a covered saucepan, stirring occasionally; add water or broth if necessary.

What else can you put in pork meatballs?

Add color and nutrients to your pork meatballs by tossing in very finely chopped herbs and vegetables. Start by sauteing finely chopped onion, bell pepper and celery until tender. Cool completely before adding to the meatball mixture, then stir in minced fresh herbs like basil, oregano and thyme. Or you can spice up pork meatballs by adding 1/8 teaspoon of cayenne pepper or red pepper flakes.

What can you serve with pork meatballs?

A slice of crusty bread always goes well with pork meatballs, especially if you're serving the meatballs with a delicious marinara sauce. Pork meatballs plus marinara also make a great meatball sub. Or, spoon the pork meatballs on top of homemade egg noodles.

Can you make pork meatballs ahead of time?

Pork meatballs are the perfect make-ahead meal. Whip them up 2-3 days in advance and dinner will be a snap. They can also be made ahead and frozen. Freeze cooled meatballs in airtight containers for up to 3 months. When you're ready to cook the pork meatballs, partially thaw them in the fridge overnight. Then, heat in a covered saucepan over low heat, stirring occasionally until heated through. If needed, add a tablespoon or two of water or broth while heating.
