In a large bowl, combine the biscuit mix, eggs and oil. Add club soda and stir until smooth.
Bake in a preheated waffle iron according to manufacturer's directions until golden brown. Freeze option: Cool waffles on wire racks. Freeze between layers of waxed paper in freezer containers. To use, reheat waffles in a toaster on medium setting. Or, microwave each waffle on high for 30-60 seconds or until heated through.

This is my daughter's favorite waffle recipe. I've made it numerous times. I usually add mini chocolate chips to half the recipe. It is also good with blueberries on top or mashed bananas replacing some of the oil.

We really like these and they are so easy to make.. we love the little crunch. I did add 1 tsp. of vanilla just for alittle extra flavor.

I make this every weekend in my house. My family can never get enough. I add a vanilla to give a bit of flavor.
