Lemon & Garlic New Potatoes

This is a simplified version of a dish my Costa Rican host sister used to make when I was in the Peace Corps. It has become a favorite side dish at my house. —Katie Bartle, Parkville, Missouri

Ingredients

  • 1 pound small red potatoes
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 1/4 cup shredded Parmesan cheese
  • 2 tablespoons lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Directions

  • Cut scrubbed potatoes into wedges; place in a large saucepan. Add water to cover; bring to a boil. Cook, covered, until tender, 10-15 minutes; drain. In the same pan, heat oil over medium-high heat. Add potatoes; cook until browned, 4-6 minutes. Add garlic; cook 1 minute longer. Remove from heat. Stir in remaining ingredients.

    I used lemon zest instead of lemon juice. The lemony taste was in each bite, but it was not as acidic as lemon juice. Excellent paired with grilled lamb and steamed broccoli.

    Flavorful treatment of potatoes and easy to make. I made the recipe exactly as written. After I came to the table, I did add a bit more parmesan cheese, although husband chose not to. I thought the amount of lemon juice was not overpowering to our tastes; however, if you do, then cut it back a bit next time.

    This was a good recipe for potatoes! I liked the flavors.....a little strong on the lemon and my potatoes didn't really brown. So I'd do some adjusting.

    Hi clkoster,The last line in the method says to "stir in remaining ingredients". That would include the lemon juice.Hope that helps!

    The recipe doesn't ever tell you what to do with the lemon juice.

    I did follow the recipe as presented! I did find this side dish to taste quite good-I believe that I'd add more olive oil and use a larger saucepan to brown the potatoes after cooking them. I'd also use more lemon juice for more of a zip!

    This recipe was quick and easy. Since it called for cooked potatoes, I had to boil them for about 15 mins. Wish I had read that the day before and it would have made the dish much faster. The only modifications I made was a little more parmesan cheese and lemon zest directly on potatoes!! Yummy recipe!
