Kid-Pleasing Taco Pizza

Ingredients

  • 1 tube (13.8 ounces) refrigerated pizza crust
  • 1 pound lean ground turkey
  • 3/4 cup water
  • 1 envelope reduced-sodium taco seasoning
  • 1 can (16 ounces) fat-free refried beans
  • 1-1/2 cups shredded pizza cheese blend
  • 3 medium tomatoes, chopped
  • 7 cups shredded lettuce
  • 2 cups crushed baked tortilla chip scoops

Directions

  • Unroll crust into a 15x10x1-in. baking pan coated with cooking spray; flatten dough and build up edges slightly. Bake at 425° for 8-10 minutes or until edges are lightly browned.
  • Meanwhile, in a large nonstick skillet, cook turkey over medium heat until no longer pink; drain. Stir in water and taco seasoning. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes. Stir in refried beans until blended.
  • Spread turkey mixture over crust; sprinkle with cheese. Bake at 425° for 5-7 minutes or until cheese is melted. Top with tomatoes, lettuce and chips. Serve immediately.

    I used 1 and a half pizza crusts so that it would fit the pan. Everyone loved it. Two of my kids don't like beans and they loved it. Will def make this again.

    REALLY good with a little kick. I made this on a pizza pan using thin crust pizza dough. I used half ground turkey breast and half hot Italian sausage; 1/2 taco seasoning and 1/2 fajita seasoning that I had on hand. The meat mixture made twice as much as needed. I used cheddar/jack/pepper-jack cheese; 2 cups lettuce; 1/2 cup crushed tortilla chips and a combination of chopped plum tomato and chopped baby heirloom. I topped mine with a dollop of sour cream.REALLY good with a little kick. I made this on a pizza pan using thin crust pizza dough.     This was very bland for adults, so needs some extra pizzazz to the meat. Another reviewer's suggestion of adding sour cream and salsa is a good idea. My husband doesn't like turkey, so one could also use beef.

    I made this with my granddaughters, 4 and 2 yrs. old. Putting the pizza dough on a cookie sheet is also too thin, so use a pizza pan. Grandkids liked making an edge with the dough and they were enthralled with sprinkling shredded cheese on top of the meat mixture. They liked the finished pizza immensely! The 4 yr. old asked what we would make next week. :)

    My kids really liked this and so did my husband and I. I used a standard cookie sheet instead of the bigger pan b/c the first time I used it, the crust was too thin for the topping. I also used colby/jack cheese instead of pizza cheese and added sour cream and salsa to the "adults" side. Yummy!
