Ingredients

  • 1 cup sliced sweet onion
  • 1 cup julienned green pepper
  • 1 tablespoon butter
  • 8 eggs, beaten
  • 1 tablespoon minced fresh basil
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 4 whole pita breads, warmed
  • 1 large tomato, sliced
  • 1/2 cup crumbled feta cheese

Directions

  1. In a large skillet, saute onion and green pepper in butter for 3 minutes or until tender. Add the eggs, basil, oregano, salt and pepper; cook and stir over medium heat until eggs are completely set. Spoon onto pita bread. Top with tomato and cheese.
