I came up with this recipe after eating grilled meatloaf at a restaurant years ago. I loved the idea and developed a recipe that we like even more! Using indirect heat allows the centers to cook through before the outsides of the loaves get too dark. —Karin Gatewood, Dallas, Texas

Cowboy Grilled Meat Loaf

Yield 2 loaves (3 servings each)

Ingredients

  • 1 large egg, lightly beaten
  • 1 medium onion, finely chopped
  • 3/4 cup Italian-style panko bread crumbs
  • 1/2 cup finely chopped seeded jalapeno pepper or green pepper
  • 1/2 cup ketchup
  • 3 tablespoons Worcestershire sauce
  • 1 pound lean ground beef (90% lean)
  • 1/2 pound spicy bulk pork sausage
  • GLAZE:
  • 2/3 cup ketchup
  • 2 tablespoons brown sugar
  • 2 tablespoons spicy brown mustard

Directions

  1. In a large bowl, combine the first 6 ingredients. Add beef and sausage; mix lightly but thoroughly. Shape into two 6x4-in. loaves.
  2. Prepare grill for indirect heat. Grill loaves, covered, over indirect medium heat for 20 minutes. Meanwhile, in a small bowl, combine glaze ingredients.
  3. Brush top and sides of loaves with glaze. Grill until a thermometer reads 160°, another 10-15 minutes. Let stand for 10 minutes before slicing.
