Cherry Chicken Croissants

- 2 cups diced cooked chicken
- 3 celery ribs, chopped
- 1/2 cup dried cherries
- 1/2 cup chopped walnuts
- 1/2 cup halved green grapes
- 8 bacon strips, cooked and crumbled
- 1/2 cup mayonnaise
- 6 croissants, split
- In a large bowl, combine the first seven ingredients. Serve on croissants.

This is a big winner at our house. Based on pantry limitations I substituted chopped pecans, diced cooked prosciutto, and Miracle Whip. And I didn’t measure, just eyeballed everything based on the amount of chicken I had. DH is already coveting the leftovers.

Made these for a gathering at my son's in-law. They were so easy to prepare and the flavors were perfect together, everyone love these sandwiches, even my 3 year old grand-daughter loved them.

Loved the cherry, grapes and bacon in this recipe - i love a great chicken salad and this was a new one and a keeper
