I had a similar chicken salad at a restaurant and created my own version. It may seem like an odd combination, but the ingredients work really well together. My children love it, and it only takes a few minutes to cut everything up—so easy!

Ingredients

  • 2 cups diced cooked chicken
  • 3 celery ribs, chopped
  • 1/2 cup dried cherries
  • 1/2 cup chopped walnuts
  • 1/2 cup halved green grapes
  • 8 bacon strips, cooked and crumbled
  • 1/2 cup mayonnaise
  • 6 croissants, split

Directions

  1. In a large bowl, combine the first 7 ingredients. Serve on croissants.

  • Croissants make these sandwiches special, but you can switch to whole wheat bread and save nearly 100 calories per serving.
