Cheesy Hash Brown Bake

These cheesy hashbrown potatoes were so popular at the morning meetings of our Mothers of Preschoolers group that we published it in our newsletter. It's a great dish for busy moms because it can be prepared ahead of time. It's perfect for brunches or to serve on Christmas morning. It's creamy, comforting and tasty. —Karen Burns, Chandler, Texas

Ingredients

  • 1 package (30 ounces) frozen shredded hash brown potatoes, thawed
  • 2 cans (10-3/4 ounces each) condensed cream of potato soup, undiluted
  • 2 cups sour cream
  • 2 cups shredded cheddar cheese, divided
  • 1 cup grated Parmesan cheese

Directions

  • Preheat oven to 350°. In a large bowl, combine potatoes, soup, sour cream, 1-3/4 cups cheddar cheese and Parmesan cheese. Transfer to a greased 3-qt. baking dish. Sprinkle with remaining cheddar cheese.
  • Bake, uncovered, until bubbly and cheese is melted, 40-45 minutes. Let stand 5 minutes before serving.

    Love these cheesy hash brown potatoes. Very easy to put together and they taste amazing. I will for sure be saving and making this again and again.

    3rd time made. Love this teciepe. 1st time potato/chicken. 2nd time potato/onion. 3rd time potato/bacon. Added onions on all 3 times. All good, topped with frosted flakes.

    This is the first thing I've made from scratch in decades and it turned out wonderfully! Everyone loved it! Next time I'm going to try adding bacon bits.

    Wonderful dish and a very nice change from the "usual" potato casserole that appears at every holiday gathering. I curious if anyone knows whether leftovers would freeze well? Thanks

    I made this exactly as written and it was amazing! I almost used a different cream soup because I didn't have cream of potato on hand but I'm glad I stuck to the recipe. The consistency of the recipe seemed too thick but it turned out just fine. Easily adaptable to add your favorite extras. The next time I have leftover ham or bacon I'll be making this again, thank you!

    I made one half recipe. I did not have cream of potato soup, so I substituted cream of mushroom. This was good. I think next time I make this, I will use sliced potatoes. The hash browns made it a little too creamy. A very good dish, though. Thanks for the recipe.

    I made a half batch becasue I don't have a 3 qt baking dish and it turned out great. So creamy and cheesy! Whole family loved it and I will definitely make it again.

    The store was out of shredded hash browns, so I used cubed instead. I also sauteed some onion and added it, too. I made this recipe for Easter dinner, and everyone loved it. I'll definitely be making this again!

    I add chopped onion and about 1/4 tsp of red pepper flakes, gives it a little kick!
