Cheesy Hash Brown Bake
Total TimePrep: 10 min. Bake: 40 min.
- 1 package (30 ounces) frozen shredded hash brown potatoes, thawed
- 2 cans (10-3/4 ounces each) condensed cream of potato soup, undiluted
- 2 cups sour cream
- 2 cups Kerrygold shredded cheddar cheese, divided
- 1 cup grated Parmesan cheese
- Preheat oven to 350°. In a large bowl, combine potatoes, soup, sour cream, 1-3/4 cups cheddar cheese and Parmesan cheese. Transfer to a greased 3-qt. baking dish. Sprinkle with remaining cheddar cheese.
- Bake, uncovered, 40-45 minutes or until bubbly and cheese is melted. Let stand 5 minutes before serving.

This is the first thing I've made from scratch in decades and it turned out wonderfully! Everyone loved it! Next time I'm going to try adding bacon bits.

Wonderful dish and a very nice change from the "usual" potato casserole that appears at every holiday gathering. I curious if anyone knows whether leftovers would freeze well? Thanks

I made this exactly as written and it was amazing! I almost used a different cream soup because I didn't have cream of potato on hand but I'm glad I stuck to the recipe. The consistency of the recipe seemed too thick but it turned out just fine. Easily adaptable to add your favorite extras. The next time I have leftover ham or bacon I'll be making this again, thank you!

I made one half recipe. I did not have cream of potato soup, so I substituted cream of mushroom. This was good. I think next time I make this, I will use sliced potatoes. The hash browns made it a little too creamy. A very good dish, though. Thanks for the recipe.

I made a half batch becasue I don't have a 3 qt baking dish and it turned out great. So creamy and cheesy! Whole family loved it and I will definitely make it again.

The store was out of shredded hash browns, so I used cubed instead. I also sauteed some onion and added it, too. I made this recipe for Easter dinner, and everyone loved it. I'll definitely be making this again!

I add chopped onion and about 1/4 tsp of red pepper flakes, gives it a little kick!

Good recipe! I used a can of cream of mushroom and a can of cream of potato instead of two cans of cream of potato and skipped the Parmesan cheese and it turned out great!

I used a can of cream of chicken and a can of cheddar cheese soup. I added salt and a generous amount of pepper. I also seasoned with onion powder and added a little milk. Very moist and flavorful.
