In a microwave-safe bowl, combine the first 5 ingredients. Cover and microwave on high until heated through, about 2 minutes. Pour into 4 serving bowls; drizzle each with lime juice. Sprinkle with cheese and green onions.
Test Kitchen tips
This recipe travels nicely in a jar. After combining the first five ingredients, pour mixture into four half-pint canning jars or one 1-qt. jar. Omit lime juice. In separate small jars, layer cheddar cheese, green onions and a lime wedge. Cover all jars and refrigerate until serving. To serve, pour 1 cup soup into a microwave-safe bowl and microwave on high until heated through, 2-3 minutes. Serve with cheese, green onions and lime.

I just realized I accidentally left out the lime juice and this soup was still fantastic! I did it on the stove, not the microwave and it was done in no time. I can't wait to make it again and will serve it with tortilla chips.

We just love this soup. I used medium salsa, sprinkled some fresh cilantro on as well. I did it on the stovetop. I look forward to teaching my grandkids this recipe. Janet VFE

I prepped this soup for four days of lunches and it was delicious! The lime and green onions added a perfect fresh element to the soup. The simplicity was awesome. I will definitely be prepping this again for lunches.

I made 4 recipes, hoping for leftovers..NOT. I used 2 cans of beans and 2 cans of refried black beans. To that I added 2 whole cans of corn... a little more than the recipe calls for. It was very good.

Delicious! I subbed the chicken broth for veggie broth to get a vegetarian meal. The lime juice is a great touch! So simple and easy to make. Perfect for lunches!

This is so fabulous & easy. I also double recipe & fix on the stovetop. PLUS, I add 1/2 lb. smoked sausage links (sliced into coins, then quartered). Modified the name to "Black Bart Bean Soup". Fans of "Christmas Story" will get it & my kids think the new name is great!

Is this correct amount of sodium? It seems very high. Sounds good, but I am supposed to limit sodium.

We made this when both sides of the family came over and everyone loved it! We got requests for a copy of the recipe! (Stove top is best)
