My bacon and egg bites contain an unusual ingredient: ramen noodles! These flavor-filled bites are perfect for breakfast, brunch, a snack or any time of the day! They are so simple to prepare, and everybody who tastes them loves how soft and spongy they are. —Ronna Farley, Rockville, Maryland

Ingredients

  • 1 package (3 ounces) chicken ramen noodles
  • 2 cups boiling water
  • 2 large eggs, lightly beaten
  • 1/2 cup 2% cottage cheese
  • 1/2 cup chopped fresh spinach
  • 2 bacon strips, cooked and crumbled
  • Thinly sliced green onions, optional

Directions

  1. Preheat oven to 375°. Crush ramen noodles (reserve seasoning packet); add to a large bowl. Cover with 2 cups boiling water. Let stand until noodles are tender, 2-3 min; drain.
  2. In a large bowl, combine eggs, cottage cheese, spinach, bacon and reserved seasoning packet. Stir in noodles. Fill greased muffin cups three-fourths full.
  3. Bake until a knife inserted in center comes out clean, 13-15 minutes. Cool 5 minutes before removing from pan. Serve warm. If desired, sprinkle with green onions.
