Bacon Cauliflower Salad
My Aunt Lavern’s special cauliflower salad recipe combines crispy-crunchy ingredients with a creamy dressing that’s ever so slightly sweet. —Kelly Ward Hartman, Cape Coral, Florida

I used shredded cheese instead of cubes, otherwise made as directed and it was delicious!
This is delicious! I made some changes because of what I had on hand-but it’s a huge step up from broccoli salad (which I usually love!). I used onion powder instead of onions-I really don’t like chunks of onions in things-and I did t put any sugar. I also used shredded cheese instead of cubes-it gets in every crevice that way! The cauliflower is so butter and doesn’t stick in your teeth like broccoli. It’s salty and creamy and buttery and cheesy all in one! Serving with spicy chicken to round thins out. Yum!
As I'm making this for a work luncheon tomorrow i cant help but think this might taste bland. Thinking leaving out the sugar because it might make it too sweet. I'm using Miracle Whip vs mayonnaise because that's all i had on hand. Those of you who have made this can you comment on if it needed any seasonings?
nice salad, and a good change from pasta salads. I did only use 2 teaspoons of sugar, and low fat miracle whip, since it's the hubby's preference. I reduced the bacon down to 8 slices as well.
This is a wonderful salad and my family loves it. It is great for potlucks and picnics too.
Simple recipe but sorry, I did change up the dressing for it. I am diabetic so I use 1/3 C. Splenda, 2/3 C. Mayo, 1tsp. Salt, 1/3 C Vinegar, some spices & I did not have block of cheese so I used Shredded Cheddar. Like ruthjoe, I added Red Onion as well. YUMMY!
I've made this several times and I LOVE it! I'm on Atkins and it fits in nicely with the low carb diet. I will make this in place of potato salad from now on. I used 3 T of granulated Splenda instead of sugar and used 4 green onions instead of a regular onion.. It tastes good with green or red bell peppers. And I agree with the previous reviewer....a pound of bacon is a lot. I used 8 striips. I also added appx 2/3 cup frozen peas. Yum!
A delicious salad but a pound of bacon is overkill to me, and I love bacon! I also cut the mayonnaise and sugar in half and it is still a great salad but with a lot less sugar and calories. I add purple cabbage and shredded carrots to mine for some extra color.
Heaven on earth! I crave this salad every couple months and have to make it! I do lessen the amount of onion. Wonderful.
Delicious salad and very quick to make with just a few ingredients.
