Ingredients

  • 1/2 cup bourbon or reduced-sodium chicken broth
  • 1/4 cup packed dark brown sugar
  • 3 tablespoons white vinegar
  • 3 tablespoons reduced-sodium soy sauce
  • 2 garlic cloves, minced
  • 1/2 teaspoon pepper
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 1/8 teaspoon ground allspice
  • 1 pork tenderloin (1 pound), cut into 12 slices

Directions

  1. In a small saucepan, combine the bourbon, brown sugar, vinegar, soy sauce, garlic and pepper. Bring to a boil; cook until liquid is reduced to about 1/2 cup, stirring occasionally.
  2. Meanwhile, combine the chili powder, cinnamon, salt and allspice; rub over pork slices.
  3. In a large skillet coated with cooking spray, cook pork over medium heat until tender, 2-4 minutes on each side. Serve with sauce.
