Ingredients

  • 8 cups cubed seedless watermelon
  • 2 medium English cucumbers, halved lengthwise and sliced
  • 6 green onions, chopped
  • 1/4 cup minced fresh mint
  • 1/4 cup balsamic vinegar
  • 1/4 cup olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Nutritional Facts

3/4 cup equals 60 calories, 3 g fat (trace saturated fat), 0 cholesterol, 78 mg sodium, 9 g carbohydrate, 1 g fiber, 1 g protein. Diabetic Exchanges: 1/2 fruit, 1/2 fat.

Directions

  1. In a large bowl, combine watermelon, cucumbers, green onions and mint. In a small bowl, whisk remaining ingredients. Pour over salad and toss to coat. Serve immediately or refrigerate, covered, up to 2 hours before serving. Yield: 16 servings (3/4 cup each).

Interesting way to use summer fruits and vegetables. Didnt use the mint and did cut the recipe in half as there are only two of us.

I used balsamic vinaigrette instead of the vinegar/oil/salt/pepper. Delicious! Will definitely make again! Coworker made it this way also, and her family loved it too!!

OMG this is quite a taste sensation! I read thru this recipe and tho't it a very strange combination, but after reading the reviews I decided to give it a try. It was amazingly good! DH declared it a keeper too. I did use white Balsamic, and maybe went a little light on the onions, but followed the recipe, and like everyone said, did not put the dressing on until right before we sat down to dinner. YUM! I'm sharing this one with my daughters.
