Mint Watermelon Salad

I invented this refreshing fruit salad one sultry afternoon while my friends were gathered around my pool. It was quick to prepare and disappeared from their plates even quicker. Even the kids loved it! —Antoinette DuBeck, Huntingdon Valley, Pennsylvania

We loved this watermelon salad and will be making it often this summer! I didnt add the sugar because our melon was pretty sweet as it was. The mint and lemon flavors brightened the watermelon and made a very refreshing great tasting dish.

The best review I can give comes from when I served this to my grandsons- ages 6 and 9 yrs. The youngest saying "I like this more better than the other kind (plain watermelon)." And, because watermelon is his favorite food- that was a good endorsement. I think this would make a lovely salad to serve at a summer picnic, or ladies luncheon. It is refreshing, and suprising
