Mint Watermelon Salad

- 6 cups cubed seedless watermelon
- 2 tablespoons minced fresh mint
- 1 tablespoon lemon juice
- 1 tablespoon olive oil
- 2 teaspoons sugar
- Place watermelon and mint in a large bowl. In a small bowl, whisk lemon juice, oil and sugar until sugar is dissolved. Drizzle over salad; toss gently to combine.
Nutrition Facts3/4 cup: 56 calories, 2g fat (0 saturated fat), 0 cholesterol, 2mg sodium, 9g carbohydrate (9g sugars, 1g fiber), 1g protein. Diabetic Exchanges: 1/2 fruit.

The best review I can give comes from when I served this to my grandsons- ages 6 and 9 yrs. The youngest saying "I like this more better than the other kind (plain watermelon)." And, because watermelon is his favorite food- that was a good endorsement. I think this would make a lovely salad to serve at a summer picnic, or ladies luncheon. It is refreshing, and suprising

This recipe is so simple and prefect! We just had a nice watermelon and a load of mint come out of our garden! This was tasty and so wonderful.
