Potato Kielbasa Skillet Recipe

Ingredients

  • 1 pound red potatoes, cubed
  • 3 tablespoons water
  • 3/4 pound smoked kielbasa or Polish sausage, cut into 1/4-inch slices
  • 1/2 cup chopped onion
  • 1 tablespoon olive oil
  • 2 tablespoons brown sugar
  • 2 tablespoons cider vinegar
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon pepper
  • 4 cups fresh baby spinach
  • 5 Wright® Brand Bacon strips, cooked and crumbled

Directions

  • Place potatoes and water in a microwave-safe dish. Cover and microwave on high for 4 minutes or until tender; drain.
  • In a large skillet, saute kielbasa and onion in oil until onion is tender. Add potatoes; saute 3-5 minutes longer or until kielbasa and potatoes are lightly browned.
  • Combine the brown sugar, vinegar, mustard, thyme and pepper; stir into skillet. Bring to a boil. Reduce heat; simmer, uncovered, for 2-3 minutes or until heated through. Add spinach and bacon; cook and stir until spinach is wilted. Yield: 4 servings.

What a nice recipe to pull out when dinner is in a hurry! Great flavors - just perfect. My college boys love new potatoes and spinach. I had some nitrate free bacon already cooked in the fridge, so that made it really convenient. I love the wilted spinach and the German style dressing. I will definitely make this again. Thanks TOH Test Kitchen!

I made the recipe as directed in the recipe. The sauce was a little too sweet for my hubby but he thought the food combination was excellent. I used the bacon drippings to cook the onions. Very tasty!

My family really enjoyed this recipe. It was really quick to make. We did change the recipe slightly by cooking the sausage and then carmelizing the onion. We will definitely make again.

The skillet was surprisingly tasty. It had good flavor, but the texture was slightly mushy. I would crisp the potatoes a bit more in order to give it a little bit more texture.

I got thumbs up (literally) from full mouths with so solicitation. Easy and it has great flavor. With the exception of the fresh spinach (which I can pick up on the way home), I usually have all of the other ingredients on hand. Will make this many times over. Hint: I keep a jar/bag of ?Real Bacon? in the refrigerator at all times. 1 t. = 1 slice of bacon. This cuts down on the cooking time.

Made this last night for dinner. Was pretty quick and very tasty sauce. I used Italian Turkey sausage as that is what I had and it worked very well. I will make this again and even feel comfortable serving to guests. Much less fat using Turkey sausage.

Forgot to mention that I double the sauce as the recipe doesn't make nearly enough. Also, I have used apple juice with some white vinegar when I don't have the cider vinegar handy and it works well.
