Just like the larger batches I used to make for my family! I'm alone so don't have all ingredients on hand. I used 1/2 tbsp white vinegar in milk in place of buttermilk, crushed walnuts instead of wheat germ. Added 1 teaspoon of sugar. PERFECTION!

Edit on that last review - sour milk - 1/2 cup of milk and 1/2 tablespoon of lemon juice
I didn't have buttermilk, so sub'd with sour milk (1/2 cup of milk with 1/2 teaspoon of lemon juice). Only used a pinch of salt. Made more than enough for one.

this is the perfect amount for one person, but the pancakes were a little salty. next time i would add a little sugar to the batter

on the hunt for pancake recipe for one,found this.It's promising. But due to I didn't want to run to the grocery store, I didn't have toasted wheat germ,so replaced w/flour.Didn't have buttermilk,just used whole milk.Used Coconut oil (my latest fav) & always put vanilla in my batter. It was alil' heavier texture that I like but I will try it w/wheat germ & buttermilk for that may make a difference! Thanks for sharing your recipe, this empty nester is going through withdrawls on my carbs since my Girls are not here!

A perfect recipe for a single serving of pancakes. I made 2 large ones from this recipe and it was more than enough. The pancakes are easy to make and taste so good (I added chocolate chips!)
