Apple Bread

I got this recipe a long time ago and with a few changes it's become one of our favorites. Everyone who's ever tasted this bread has asked for the recipe!

METHOD: Baked

TIME: Prep: 20 min. Bake: 40 min. + cooling

Ingredients:

  • 3 cups all-purpose flour
  • 2 cups sugar
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 eggs, beaten
  • 1/2 cup vegetable oil
  • 1/2 teaspoon vanilla extract
  • 2 cups coarsely chopped peeled apples
  • 1 cup broken walnuts

Directions:

In bowl, combine the flour, sugar, cinnamon, baking soda, baking powder and salt; set aside. Combine the eggs, oil, vanilla and apples. Stir into flour mixture. Fold in the walnuts.
    Pour into two greased 8-in. x 4-in. loaf pans. Bake at 350° for 40-45 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool. Yield: 2 loaves.

    I had the exact same issue. I looked at one of my banana bread recipes that makes two loaves and ended up adding a stick of melted butter (or you can add more vegetable oil - probably 1/2 cup more) and 2 more eggs. The mixture was still dry, so I added some apple juice to get it to the right consistency. The only thing is that I also had to bake the mixture much longer than it states in the recipe. I took it out at the time that the recipe stated and it looked perfect. I went for my evening walk and when I returned, it had fallen in the middle. I put it back in the oven (otherwise I would have had to throw it away). I doesn't look as pretty, but it tastes great! Next time, I will remove some of the sugar and use half brown sugar.

    I made this bread yesterday, and the mixture was so dry that it was almost like streusal topping. Surely, there is a mistake in the recipe. It needs some more moisture. It smells wonderful baking, but it did not rise at all and was doughy when I took it out of the pans. Needless to say, it was a waste of a lot of ingredients that went into the trash. If there is a mistake on the recipe, I would appreciate it if someone would let me know.
