Ingredients

  • 1 small onion, chopped
  • 1 jalapeno pepper, seeded and chopped
  • 1 garlic clove, minced
  • 2 teaspoons vegetable oil
  • 1 can (16 ounces) refried beans
  • 2 tablespoons water
  • 1 teaspoon hot pepper sauce
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon chili powder
  • 1/8 teaspoon cayenne pepper
  • 1/2 cup shredded Monterey Jack cheese

Directions

  1. In a large skillet, saute the onion, jalapeno and garlic in oil for 2-3 minutes or until tender. Stir in the beans, water, hot pepper sauce, cumin, chili powder and cayenne. Cook and stir over medium-low heat until heated through. Transfer to a serving bowl; sprinkle with cheese.
